Ingredients

  • 4.00 cup watermelon rind , peeled and cubed
  • 2.00 cup apple cider vinegar
  • 2.00 cup water
  • 1.50 cup sugar
  • 1.00 tbsp salt
  • 1.00 tsp whole cloves
  • 1.00 cup innamon stick
  • 1.00 l emon , sliced

Instructions

    Remove green skin and most of red flesh from watermelon rind.

    Cut into 1-inch cubes.

    Soak in salted water overnight.

    Drain and rinse.

    Boil vinegar, water, sugar, and spices until sugar dissolves.

    Add rind and lemon.

    Simmer 30 minutes until rind is tender.

    Pack into sterilized jars.

    Seal and process or refrigerate.

    Wait 1 week before eating.
