Sweet Potato Soup
Creamy sweet potato soup with warm spices and a dollop of sour cream.
Ingredients
- 4.00 l arge sweet potatoes , peeled and cubed
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 4.00 cup chicken broth
- 1.00 cup coconut milk or heavy cream
- 2.00 tbsp butter
- 1.00 tsp cinnamon
- 0.50 tsp ginger
- salt and pepper
- toasted pecans
Instructions

Melt butter in a large pot over medium heat.

Sauté onion until softened.

Add garlic and cook 1 minute.

Add sweet potatoes and broth and bring to a boil.

Simmer 25 minutes until sweet potatoes are very tender.

Blend until smooth with an immersion blender.

Stir in coconut milk or cream, cinnamon, and ginger.
