Hot Tamales
Mississippi Delta style tamales wrapped in corn husks with spiced beef filling.
Ingredients
- 2.00 lb ground beef or pork
- 2.00 cup cornmeal
- 1.00 cup masa harina
- 1.00 tsp salt
- 1.00 tsp cumin
- 1.00 tsp chili powder
- 1.00 cup beef broth
- 0.50 cup lard or shortening
- dried corn husks soaked in water
Instructions

Season meat with salt, cumin, and chili powder and cook until browned.

Mix cornmeal, masa harina, lard, and broth together until dough forms.

Spread thin layer of dough on soaked corn husks.

Place spoonful of meat filling down the center.

Roll husk around tamale and fold bottom up.

Stand tamales upright in a steamer.

Steam 1 hour until dough is firm and pulls away from husk cleanly.
