Sweet Potato Pie
A spiced sweet potato custard pie — the South's answer to pumpkin pie.
Ingredients
- 2.00 cup mashed sweet potatoes
- 1.00 inch unbaked pie crust
- 0.75 cup sugar
- 2.00 l arge eggs
- 0.50 cup butter
- 1.00 cup whole milk
- 1.00 tsp vanilla extract
- 1.00 tsp cinnamon
- 0.50 tsp nutmeg
- 0.25 tsp ginger
- pinch of salt

Preheat oven to 350°F.

Bake sweet potatoes until very tender then mash until smooth.

Beat sweet potatoes with sugar, eggs, melted butter, milk, vanilla, and all spices until smooth.

Pour into unbaked pie crust.

Bake 55-65 minutes until filling is set and a knife inserted near center comes out clean.

Cool completely before slicing.

Serve with whipped cream.
