Southern Snack Cake
A simple one bowl chocolate snack cake with chocolate frosting.
Ingredients
- 2.00 cup all-purpose flour
- 2.00 cup sugar
- 1.00 tsp baking soda
- 0.50 tsp salt
- 1.00 cup butter
- 1.00 cup strong black coffee
- 0.25 cup cocoa powder
- 2.00 l arge eggs
- 0.50 cup buttermilk
- 1.00 tsp vanilla
- chocolate icing: 1/2 cup butter , 1/4 cup cocoa, 6 tbsp milk, 4 cups powdered sugar, 1 tsp vanilla, 1 cup chopped pecans

Preheat oven to 350ยฐF and grease a 9x13 pan.

Bring butter, coffee, and cocoa to a boil.

Pour over flour, sugar, baking soda, and salt.

Mix well.

Add eggs, buttermilk, and vanilla.

Mix until smooth.

Pour into pan.

Bake 30-35 minutes.

While cake bakes make icing: melt butter with cocoa and milk, whisk in powdered sugar and vanilla.

Stir in pecans.

Pour hot icing over hot cake.

Cool completely before cutting.
