Country Captain Eggs
Spiced eggs scrambled with bell peppers, onions, and curry — a Southern coastal classic.
Ingredients
- 6.00 l arge eggs , hard boiled and halved
- 3.00 tbsp mayonnaise
- 1.00 tsp curry powder
- 1.00 tsp yellow mustard
- salt and pepper
- paprika and fresh parsley
Instructions

Peel hard boiled eggs and slice in half lengthwise.

Remove yolks and place in a bowl.

Mash yolks with mayonnaise, curry powder, mustard, salt, and pepper until smooth.

Spoon or pipe filling back into egg white halves.

Sprinkle with paprika and garnish with fresh parsley.
