Stewed Tomatoes
Fresh summer tomatoes stewed with butter, sugar, and cornbread crumbles.
Ingredients
- 6.00 l arge ripe tomatoes , peeled and diced
- 1.00 onion , diced
- 2.00 stalks celery , diced
- 3.00 tbsp butter
- 2.00 tbsp sugar
- 1.00 tsp salt
- 0.50 tsp black pepper
- 0.50 tsp basil
- 4.00 slice white bread , cubed optional
Instructions

To peel tomatoes, score with an X and dip in boiling water 30 seconds then peel.

Melt butter in a large saucepan over medium heat.

Sauté onion and celery until softened.

Add tomatoes, sugar, salt, pepper, and basil.

Simmer 20-25 minutes until tomatoes break down.

Add bread cubes to thicken if desired.

Serve hot as a side dish.
