Hoe Cakes
Simple cornmeal flatcakes cooked on a griddle — an old Southern staple.
Ingredients
- 1.00 cup white cornmeal
- 0.50 tsp salt
- 0.50 tsp baking powder
- 1.00 cup boiling water
- 2.00 tbsp vegetable oil or bacon drippings

Mix cornmeal, salt, and baking powder together.

Pour boiling water over cornmeal mixture and stir until a thick batter forms.

Let rest 5 minutes.

Heat oil or bacon drippings in a cast iron skillet over medium-high heat.

Drop large spoonfuls of batter into hot skillet.

Flatten slightly with the back of a spoon.
