Hush Puppies
Crispy cornmeal hush puppies fried golden — perfect with fried fish.
Ingredients
- 1.00 cup yellow cornmeal
- 0.50 cup all-purpose flour
- 1.00 tsp baking powder
- 0.50 tsp baking soda
- 0.50 tsp salt
- 1.00 tbsp sugar
- 0.50 cup buttermilk
- 1.00 l arge egg
- 0.25 cup finely onion
- vegetable oil for frying
Instructions

Mix cornmeal, flour, baking powder, baking soda, salt, and sugar.

Whisk together buttermilk and egg.

Stir wet into dry until just combined.

Fold in diced onion.

Heat 3 inches of oil to 375°F.

Drop rounded tablespoons of batter into hot oil.

Fry in batches 3-4 minutes turning until golden brown all over.

Drain on paper towels.

Serve hot alongside fried fish or catfish.
