Ingredients

  • 6.00 medium potatoes , peeled and diced
  • 1.00 onion , diced
  • 4.00 strips bacon , chopped
  • 4.00 cup chicken broth
  • 1.00 cup whole milk
  • 1.00 cup sour cream
  • 1.00 cup cheddar cheese
  • salt and pepper
  • green onions

Instructions

    Cook bacon until crispy, remove and set aside.

    Sauté onion in bacon drippings.

    Add potatoes and broth.

    Bring to a boil and cook 15-20 minutes until potatoes are very tender.

    Mash some potatoes to thicken soup.
