Southern Beef Burgundy
Chuck roast slow braised with bourbon, onions, and mushrooms.
Ingredients
- 3.00 lb beef stew meat
- 0.50 lb bacon , diced
- 1.00 bottle red wine
- 2.00 cup beef broth
- 1.00 lb mushrooms , sliced
- 1.00 onion , diced
- 4.00 cup loves garlic , minced
- 3.00 cup arrots , diced
- 2.00 tbsp tomato paste
- salt , pepper, thyme, and bay leaf

Brown bacon in a Dutch oven.

Remove bacon and brown beef in batches in bacon fat.

Remove beef.

Sauté onion, garlic, and carrots.

Add tomato paste and cook 1 minute.

Return bacon and beef.

Pour in wine and broth.

Add thyme and bay leaf.

Cover and braise at 325°F for 2 hours.

Add mushrooms and cook 30 more minutes.

Remove bay leaf, adjust seasoning, and serve.
