Keto Squash Casserole
Yellow squash layered with cheddar cream and savory seasoning baked until bubbly and golden. A low-carb Southern classic.
Ingredients
- 4.00 medium yellow squash sliced
- 1.00 cup sharp cheddar shredded
- 4.00 oz cream cheese softened
- 1.00 cup sour cream
- 1.00 onion diced
- 2.00 eggs
- 2.00 tbsp butter
- 1.00 tsp garlic powder
- 0.00 Salt and pepper to taste
- 1.00 cup crushed pork rinds for topping
Instructions

Preheat oven to 375F and grease a 2 quart baking dish.

Saute squash and onion in butter over medium heat 8 minutes until softened.

Drain any excess liquid from squash in a colander.

Beat cream cheese sour cream eggs and garlic powder together until smooth.

Fold in squash mixture and half the cheddar.

Season with salt and pepper.

Pour into prepared dish.

Top with remaining cheddar and crushed pork rinds.

Bake 35 to 40 minutes until set and golden on top.
