Southern Banana Pudding
Three layers of pure Southern joy — vanilla wafers, bananas, and cream.
Ingredients
- 4.00 cup whole milk
- 0.75 cup sugar
- 0.33 cup all-purpose flour
- 0.25 tsp salt
- 4.00 l arge egg yolks
- 2.00 tsp vanilla extract
- 3.00 tbsp butter
- 1.00 box vanilla wafers
- 4.00 ripe bananas , sliced
- meringue: 4 egg whites , 1/4 cup sugar

Whisk together sugar, flour, and salt in a heavy saucepan.

Whisk in milk gradually until smooth.

Cook over medium heat, stirring constantly, until thickened, about 10-12 minutes.

Beat egg yolks in a bowl.

Slowly whisk a cup of hot pudding into yolks to temper.

Pour yolk mixture back into saucepan.

Cook 2 more minutes.

Remove from heat and stir in vanilla and butter.

Layer vanilla wafers, banana slices, and pudding in a 9x13 dish, starting and ending with wafers.

Beat egg whites with sugar until stiff peaks form.

Spread meringue over pudding.

Bake at 375°F for 12-15 minutes until meringue is golden.

Cool then refrigerate at least 2 hours before serving.
