  • 4.00 l arge egg yolks
  • 2.00 tsp vanilla extract
  • 2.00 sleeves chocolate graham crackers or chocolate wafers

Instructions

    Make vanilla ice cream: whisk egg yolks with sugar until pale.

    Heat milk and cream until steaming.

    Slowly whisk hot cream into yolks to temper.

    Return to pan and cook over medium heat stirring until custard coats a spoon.

    Strain through a sieve.

    Stir in vanilla.

    Cool completely.

    Freeze until firm but not rock solid.
