Southern Ice Cream Sandwich
Homemade ice cream sandwiched between two soft chocolate cookies.
Ingredients
- 1.00 cup heavy cream
- 2.00 cup whole milk
- 0.75 cup sugar
- 4.00 l arge egg yolks
- 2.00 tsp vanilla extract
- 2.00 sleeves chocolate graham crackers or chocolate wafers

Make vanilla ice cream: whisk egg yolks with sugar until pale.

Heat milk and cream until steaming.

Slowly whisk hot cream into yolks to temper.

Return to pan and cook over medium heat stirring until custard coats a spoon.

Strain through a sieve.

Stir in vanilla.

Cool completely.

Churn in ice cream maker.

Freeze until firm but not rock solid.

Spread ice cream between two chocolate wafers or graham crackers.

Press gently and wrap in plastic wrap.
