Southern Potato Cakes
Leftover mashed potato cakes pan-fried golden and served with sour cream.
Ingredients
- 2.00 cup cold mashed potatoes
- 1.00 l arge egg
- 0.25 cup all-purpose flour
- 0.25 cup onion
- salt and pepper
- 3.00 tbsp butter or vegetable oil
Instructions

Mix mashed potatoes, egg, flour, onion, salt, and pepper together.

Form into patties about 1/2 inch thick and 3 inches across.

Heat butter or oil in a skillet over medium heat.

Cook potato cakes 3-4 minutes per side until golden brown and crispy.

Drain on paper towels.
