Molasses Pancakes
Dark and rich pancakes sweetened with Southern molasses and served with butter.
Ingredients
- 2.00 cup all-purpose flour
- 2.00 tsp baking powder
- 0.50 tsp baking soda
- 0.50 tsp salt
- 1.00 tsp cinnamon
- 0.25 tsp ginger
- 2.00 l arge eggs
- 1.75 cup buttermilk
- 0.25 cup molasses
- 3.00 tbsp butter

Whisk together flour, baking powder, baking soda, salt, cinnamon, and ginger.

In another bowl whisk eggs, buttermilk, molasses, and melted butter.

Pour wet into dry and stir until just combined.

Heat a greased griddle over medium heat.

Pour 1/4 cup batter per pancake.

Cook until bubbles form, about 2-3 minutes, then flip.

Cook 1-2 more minutes until cooked through.

Serve with butter and additional molasses or maple syrup.
