Southern Minestrone
A Southern spin on minestrone with field peas, okra, and fatback.
Ingredients
- 1.00 cup dried beans , soaked and drained
- 1.00 ham hock
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 2.00 cup arrots , diced
- 2.00 stalks celery , diced
- 1.00 cup potatoes
- 1.00 cup turnips
- 1.00 cup an tomatoes
- 6.00 cup chicken broth
- 2.00 cup collard greens , chopped
- salt and pepper
Instructions

Simmer ham hock in broth 30 minutes.

Add beans, onion, garlic, carrots, celery, potatoes, and turnips.

Cook 1 hour.

Add tomatoes and collard greens.

Simmer another 30 minutes until all vegetables and beans are very tender.

Remove ham hock and shred meat back into soup.

Season with salt and pepper.

Serve hot.
