Southern Fruitcake
A dense fruit and nut cake soaked in bourbon — a Christmas tradition.
Ingredients
- 2.00 cup all-purpose flour
- 1.00 tsp baking powder
- 0.50 tsp salt
- 1.00 tsp cinnamon
- 0.50 tsp nutmeg
- 1.00 cup butter
- 1.00 cup brown sugar
- 4.00 l arge eggs
- 0.25 cup bourbon
- 2.00 cup mixed dried fruits: raisins cherries dates figs
- 1.50 cup pecans

Preheat oven to 300°F and line two loaf pans with parchment.

Cream butter and sugar.

Beat in eggs one at a time.

Add bourbon.

Stir in flour mixture.

Fold in dried fruits and pecans.

Divide among pans.

Bake 1 1/2 to 2 hours until a toothpick comes out clean.

Cool in pans.

Wrap in cheesecloth soaked in bourbon.

Wrap in foil and store in a cool place.

Age at least 2 weeks, re-soaking cheesecloth with bourbon weekly.

The longer it ages the better it tastes.
