Sweet Potato Cheesecake
A silky sweet potato cheesecake with a graham cracker crust.
Ingredients
- graham cracker crust: 2 cups crushed graham crackers , 1/3 cup sugar, 1/2 cup melted butter
- filling: 24 oz cream cheese , 1 1/2 cups sugar, 3 large eggs, 2 cups sweet potato puree, 1 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp vanilla

Preheat oven to 325°F.

Mix graham cracker crust ingredients and press into bottom and sides of a springform pan.

Refrigerate 30 minutes.

Beat cream cheese until smooth.

Add sugar and beat until fluffy.

Beat in eggs one at a time.

Mix in sweet potato puree, cinnamon, nutmeg, and vanilla.

Pour over crust.

Bake in a water bath at 325°F for 1 hour 15 minutes until just set.

Turn off oven and let cool inside 1 hour.
