Catfish Stew
A rich Southern stew with catfish, potatoes, onions, and tomatoes.
Ingredients
- 2.00 lb catfish fillets , cut into chunks
- 4.00 slice bacon , chopped
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 4.00 potatoes , diced
- 1.00 cup an tomatoes
- 4.00 cup chicken broth
- cajun seasoning , salt, and pepper
- fresh parsley
Instructions

Cook bacon in a large pot until crispy, remove and set aside.

Sauté onion in bacon drippings.

Add garlic and cook 1 minute.

Add potatoes and broth, bring to a boil.

Cook 15 minutes until potatoes are almost tender.

Add tomatoes and catfish.

Simmer 10-12 minutes until fish is cooked through.

Season with Cajun seasoning, salt, and pepper.
