Butter Bean Soup
Creamy butter beans slow cooked with smoked turkey leg and vegetables.
Ingredients
- 2.00 cup dried butter beans
- 1.00 ham hock
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 2.00 cup arrots , diced
- 8.00 cup water
- 2.00 tbsp butter
- salt and pepper
- fresh parsley
Instructions

Soak butter beans overnight and drain.

Combine beans, ham hock, onion, garlic, carrots, and water in a large pot.

Bring to a boil then reduce heat.

Simmer 1 1/2 to 2 hours until beans are very tender.

Remove ham hock, shred meat, return to pot.

Stir in butter.

Season with salt and pepper.

Garnish with parsley and serve with cornbread.
