Red Rice
Rice cooked with tomatoes, bacon, and onion — a Lowcountry staple.
Ingredients
- 2.00 cup long-grain white rice
- 4.00 strips bacon , chopped
- 1.00 onion , diced
- 1.00 g reen bell pepper , diced
- 3.00 cup loves garlic , minced
- 1.00 cup an tomatoes
- 2.00 cup chicken broth
- salt and pepper
Instructions

Cook bacon in a heavy pot until crispy.

Remove bacon and set aside.

Sauté onion and bell pepper in bacon drippings.

Add garlic and cook 1 minute.

Add rice and stir to coat.

Add tomatoes and broth.

Bring to a boil.

Reduce heat, cover, and cook 20-25 minutes until rice is tender and liquid is absorbed.

Fluff with fork.

Top with crumbled bacon and serve.
