Andouille and Egg Scramble
Spicy andouille sausage scrambled with eggs, peppers and onions Cajun style.
Ingredients
- 0.50 lb andouille sausage , diced
- 6.00 l arge eggs
- 0.25 cup onion
- 0.25 cup green bell pepper
- 1.00 cup love garlic , minced
- 2.00 tbsp butter
- salt , pepper, and Cajun seasoning to taste
- fresh parsley
Instructions

Melt butter in a skillet over medium heat.

Brown andouille sausage until caramelized, about 4 minutes.

Add onion and bell pepper and cook 3 minutes.

Add garlic and cook 1 minute.

Whisk eggs with salt, pepper, and Cajun seasoning.

Pour eggs over sausage mixture.

Scramble gently until eggs are just cooked.
