New Orleans style pecan pralines — sweet, creamy, and irresistible.
Ingredients
- 2.00 cup sugar
- 1.00 cup light brown sugar
- 1.00 cup whole milk
- 0.50 cup butter
- 2.00 cup pecan halves
- 1.00 tsp vanilla extract
- pinch of salt

Line baking sheets with parchment paper.

Combine sugars and milk in a heavy saucepan.

Cook over medium heat, stirring, until sugar dissolves.

Add butter and continue cooking without stirring until mixture reaches 235-240°F on a candy thermometer.

Remove from heat.

Add pecans, vanilla, and salt.

Beat vigorously with a wooden spoon until mixture thickens and loses its gloss.

Drop by tablespoons onto parchment quickly before mixture sets.
