Pecan Divinity
A fluffy pecan divinity candy made with corn syrup and egg whites.
Ingredients
- 2.50 cup sugar
- 0.50 cup light corn syrup
- 0.50 cup water
- 2.00 l arge egg whites at
- 1.00 tsp vanilla extract
- 1.50 cup pecans

Cook sugar, corn syrup, and water in a heavy saucepan over medium heat, stirring until sugar dissolves.

Continue cooking without stirring until 265°F on a candy thermometer.

Meanwhile beat egg whites until stiff peaks form.

Slowly pour hot syrup over egg whites in a thin steady stream, beating constantly.

Continue beating until candy holds its shape and loses its gloss.

Quickly stir in vanilla and pecans.

Drop by rounded tablespoons onto wax paper.
