Pickled Beets
Fresh beets pickled with vinegar, sugar, and warm spices.
Ingredients
- 4.00 l arge beets
- 1.00 cup apple cider vinegar
- 1.00 cup water
- 0.50 cup sugar
- 1.00 tsp salt
- 4.00 whole cloves
- 1.00 cup innamon stick

Boil whole beets in water until tender, about 45 minutes.

Cool, peel, and slice.

Combine vinegar, water, sugar, salt, cloves, and cinnamon stick in a saucepan.

Bring to a boil and stir until sugar dissolves.

Add beet slices.

Simmer 5 minutes.

Cool and transfer to a jar.

Refrigerate at least 24 hours before serving.
