Ingredients

  • 4.00 cup yellow squash , sliced
  • 1.00 onion , diced
  • 2.00 l arge eggs
  • 1.00 cup sour cream
  • 1.00 cup an cream of chicken soup
  • 1.00 cup cheddar cheese
  • 1.00 sleeve ritz crackers , crushed
  • 4.00 tbsp butter
  • salt and pepper

Instructions

    Preheat oven to 375°F and grease a 9x13 baking dish.

    Cook squash and onion in boiling water 5 minutes until tender.

  3. 3

    Drain very well and press out excess moisture.

  4. 4

    Mix eggs, sour cream, soup, half the cheese, salt, and pepper.

    Fold in squash and onion.

    Pour into prepared dish.

    Mix crushed crackers with melted butter and remaining cheese.

    Spread over casserole.

    Bake 30-35 minutes until golden and bubbly.

    Rest 5 minutes before serving.
