Ingredients

  • 4.00 medium potatoes , diced
  • 1.00 onion , diced
  • 1.00 g reen bell pepper , diced
  • 0.50 lb breakfast sausage
  • 6.00 l arge eggs
  • 1.00 cup cheddar cheese
  • 2.00 tbsp vegetable oil
  • salt , pepper, and paprika to taste

Instructions

    Heat oil in a large cast iron skillet over medium-high heat.

    Add diced potatoes and cook until tender and golden, about 15 minutes.

    Add onion and bell pepper and cook 5 more minutes.

    Push to sides and brown sausage in the center, breaking into pieces.

    Mix everything together and season with salt, pepper, and paprika.

    Make 6 wells in the mixture and crack an egg into each.

    Cover and cook until eggs are set to your liking, about 5 minutes.

    Top with shredded cheddar and serve from the skillet.
