Persimmon Pudding
A dense, spiced pudding made from ripe persimmons — an Appalachian tradition.
Ingredients
- 2.00 cup ripe persimmon pulp
- 1.00 cup sugar
- 2.00 l arge eggs
- 1.00 cup all-purpose flour
- 1.00 tsp baking soda
- 0.50 tsp cinnamon
- 0.25 tsp nutmeg
- 0.25 tsp salt
- 1.00 cup whole milk
- 2.00 tbsp butter
- 1.00 tsp vanilla extract

Preheat oven to 325°F and grease a 9x13 baking dish.

Strain persimmon pulp through a sieve.

Mix pulp with sugar.

Beat in eggs.

Stir in milk, melted butter, and vanilla.

Add flour, baking soda, cinnamon, nutmeg, and salt and stir until smooth.

Pour into prepared dish.

Bake 55-60 minutes until set.
