Lane Cake
A traditional Alabama layer cake with a fruit and nut filling.
Ingredients
- 3.25 cup all-purpose flour
- 1.00 tbsp baking powder
- 0.50 tsp salt
- 1.00 cup butter
- 2.00 cup sugar
- 8.00 egg whites stiffly
- 1.00 cup whole milk
- 2.00 tsp vanilla
- filling: 8 egg yolks , 1 cup sugar, 1/2 cup butter, 1 cup raisins, 1 cup pecans, 1 cup shredded coconut, 1/2 cup bourbon

Preheat oven to 375°F and grease four 9-inch round pans.

Cream butter and sugar until fluffy.

Mix in flour mixture alternately with milk.

Fold in stiff egg whites and vanilla.

Divide among pans.

Bake 20-25 minutes.

Make filling by cooking egg yolks, sugar, and butter over medium heat, stirring until thickened.

Remove from heat and stir in raisins, pecans, coconut, and bourbon.

Spread filling between cake layers.

Frost outside with white frosting or whipped cream.
