Keto Southern Meatloaf
A keto-friendly version of Mama's meatloaf — seasoned ground beef with almond flour and a sugar-free ketchup glaze.
Ingredients
- 2.00 lbs ground beef 85% lean
- 1.00 cup almond flour
- 2.00 eggs
- 1.00 onion finely diced
- 3.00 cloves garlic minced
- 2.00 tbsp Worcestershire sauce
- 1.00 tsp garlic powder
- 1.00 tsp onion powder
- 0.00 Salt and black pepper to taste
- 1.00 cup sugar-free ketchup for topping
- 1.00 tbsp brown sugar substitute for topping

Preheat oven to 350F and line a loaf pan with parchment paper.

Saute onion and garlic in a little butter until softened about 5 minutes and let cool.

Combine ground beef almond flour eggs sauteed onion garlic Worcestershire sauce garlic powder onion powder salt and pepper in a large bowl.

Mix until just combined — do not overwork.

Press into the prepared loaf pan and shape into a loaf.

Mix sugar-free ketchup and brown sugar substitute together and spread over the top.

Bake 55 to 65 minutes until internal temperature reaches 160F.

Rest 10 minutes before slicing and serving.
