Peach Preserves
Homemade Georgia peach preserves made with fresh summer peaches.
Ingredients
- 4.00 cup fresh peaches peeled and
- 2.00 cup sugar
- 2.00 tbsp fresh lemon juice
- 1.00 tsp lemon zest
- 0.50 tsp cinnamon

Combine diced peaches, sugar, lemon juice, lemon zest, and cinnamon in a heavy saucepan.

Let sit 1 hour until peaches release their juices.

Bring to a boil over medium heat, stirring until sugar dissolves.

Reduce heat and simmer 25-35 minutes, stirring frequently, until thickened.

Test by placing a spoonful on a cold plate — it should gel when pushed.

Pour into sterilized jars.

Process in boiling water bath 10 minutes or refrigerate up to 3 weeks.
