Oyster Stew
A simple and elegant oyster stew with butter, milk, and fresh Gulf oysters.
Ingredients
- 1.00 pt fresh oysters with liquor
- 4.00 tbsp butter
- 1.00 small onion , finely diced
- 2.00 cup whole milk
- 1.00 cup heavy cream
- salt , white pepper, and cayenne to taste
- oyster crackers
- fresh parsley
Instructions

Melt butter in a heavy saucepan over medium heat.

Sauté onion until very soft, about 10 minutes.

Add oysters with their liquor.

Cook just until oyster edges begin to curl, about 2-3 minutes.

Stir in milk and cream.

Heat gently until hot but do not boil.

Season with salt, white pepper, and cayenne.
