Fried Green Tomato Eggs Benedict
A Southern twist on eggs Benedict with fried green tomatoes and country ham.
Ingredients
- 4.00 g reen tomatoes , sliced 1/2 inch thick
- 1.00 cup cornmeal
- 0.50 cup all-purpose flour
- 1.00 tsp salt
- 1.00 tsp black pepper
- 0.50 tsp cayenne
- 2.00 eggs for coating
- vegetable oil for frying
- 8.00 l arge eggs for poaching
- 4.00 english muffins , split and toasted
- 1.00 cup hollandaise sauce
- 8.00 slice canadian bacon
Instructions

Mix cornmeal, flour, salt, pepper, and cayenne together.

Beat 2 eggs in a shallow bowl.

Dip tomato slices in beaten egg then dredge in cornmeal mixture.

Fry in hot oil at 350°F for 2-3 minutes per side until golden.

Drain on paper towels.

Poach 8 eggs in simmering water with a splash of vinegar for 3-4 minutes.

Toast English muffins and top each with Canadian bacon, a fried green tomato slice, and a poached egg.
