Okra Soup
A Southern classic with okra, tomatoes, and corn in a light broth.
Ingredients
- 1.00 lb fresh okra , sliced
- 1.00 lb smoked sausage , sliced
- 1.00 onion , diced
- 1.00 g reen bell pepper , diced
- 3.00 cup loves garlic , minced
- 1.00 cup an tomatoes
- 6.00 cup chicken broth
- 2.00 tbsp vegetable oil
- salt , pepper, and Cajun seasoning to taste
- cooked rice
Instructions

Heat oil in a large pot over medium heat.

Brown sausage and remove.

Sauté onion and bell pepper until softened, about 5 minutes.

Add garlic and cook 1 minute.

Add okra and cook 5 minutes, stirring often.

Add tomatoes and broth.

Return sausage to pot.

Simmer 30 minutes.

Season with salt, pepper, and Cajun seasoning.
