Hummingbird Cake
A moist banana and pineapple cake with cream cheese frosting and pecans.
Ingredients
- 3.00 cup all-purpose flour
- 2.00 cup sugar
- 1.00 tsp baking soda
- 1.00 tsp cinnamon
- 0.50 tsp salt
- 3.00 l arge eggs
- 1.50 cup vegetable oil
- 2.00 tsp vanilla
- 1.00 cup an crushed pineapple with juice
- 2.00 cup mashed ripe bananas
- 1.00 cup pecans
- cream cheese frosting: 16 oz cream cheese , 1/2 cup butter, 4 cups powdered sugar, 2 tsp vanilla

Preheat oven to 350ยฐF and grease three 9-inch round pans.

Mix flour, sugar, baking soda, cinnamon, and salt.

Stir in eggs and oil until combined.

Add vanilla, pineapple with juice, bananas, and pecans.

Stir until just combined.

Divide among pans.

Bake 25-30 minutes until toothpick comes out clean.

Cool completely.

Make cream cheese frosting by beating cream cheese and butter until fluffy, then mixing in powdered sugar and vanilla.

Frost between layers and on outside of cake.
