Ingredients

  • 4.00 cup fresh or frozen corn kernels
  • 4.00 slice bacon , chopped
  • 1.00 onion , diced
  • 3.00 cup loves garlic , minced
  • 3.00 medium potatoes , diced
  • 4.00 cup chicken broth
  • 1.00 cup heavy cream
  • 2.00 tbsp butter
  • salt , pepper, and thyme to taste
  • chives

Instructions

    Cook bacon in a large pot until crispy, remove and set aside.

    Sauté onion in butter over medium heat until softened.

    Add garlic and cook 1 minute.

    Add potatoes and broth and bring to a boil.

    Cook 15 minutes until potatoes are tender.

    Add corn and cook 5 more minutes.

    Stir in heavy cream and season with salt, pepper, and thyme.

    Simmer 5 minutes more.

    Serve garnished with bacon crumbles and chives.
