Ingredients

  • 2.00 cup dried black-eyed peas
  • 1.00 ham hock
  • 1.00 onion , diced
  • 3.00 cup loves garlic , minced
  • 1.50 cup long-grain white rice
  • 4.00 cup water
  • 3.00 cup chicken broth
  • salt , pepper, and cayenne to taste
  • green onions

Instructions

    Soak peas overnight and drain.

    Cook ham hock in broth 30 minutes.

    Add peas, onion, garlic, water, salt, pepper, and cayenne.

    Simmer 1 hour until peas are tender.

    Remove ham hock and shred meat.

    Return meat to pot.

    Add rice to the peas and liquid.

    Cover and cook 20-25 minutes until rice is tender.

    Fluff and serve garnished with green onions.
