Black eyed peas and rice cooked together with smoked pork and onions.
Ingredients
- 2.00 cup dried black-eyed peas
- 1.00 ham hock
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 1.50 cup long-grain white rice
- 4.00 cup water
- 3.00 cup chicken broth
- salt , pepper, and cayenne to taste
- green onions
Instructions

Soak peas overnight and drain.

Cook ham hock in broth 30 minutes.

Add peas, onion, garlic, water, salt, pepper, and cayenne.

Simmer 1 hour until peas are tender.

Remove ham hock and shred meat.

Return meat to pot.

Add rice to the peas and liquid.

Cover and cook 20-25 minutes until rice is tender.

Fluff and serve garnished with green onions.
