Fried Fatback and Eggs
Old-fashioned fried fatback served with scrambled eggs — pure Southern tradition.
Ingredients
- 4.00 slice fatback , 1/4 inch thick
- 4.00 l arge eggs
- salt and pepper

Score fatback slices with shallow cuts to prevent curling.

Cook fatback in a cast iron skillet over medium heat, turning frequently, until crispy and golden brown, about 10-15 minutes.

Remove and drain on paper towels.

Fry eggs in the fatback drippings to desired doneness.
