Roasted Corn Salad
Roasted corn with tomatoes, red onion, and a lime vinaigrette.
Ingredients
- 4.00 ears fresh corn , husked
- 1.00 cup tomatoes
- 0.50 cup red onion
- 0.25 cup jalapeΓ±o
- 0.25 cup fresh cilantro
- juice of 2 limes
- 2.00 tbsp olive oil
- salt and pepper
Instructions

Grill or roast corn directly over flame or under broiler, turning, until charred in spots.

Let cool then cut kernels from cob.

Combine corn with tomatoes, red onion, jalapeΓ±o, and cilantro.

Drizzle with lime juice and olive oil.
