Ingredients

  • 2.00 cup potatoes
  • 2.00 cup frozen corn
  • 1.00 cup green beans
  • 1.00 cup lima beans
  • 2.00 cup arrots , diced
  • 2.00 stalks celery , diced
  • 1.00 onion , diced
  • 1.00 cup an tomatoes
  • 6.00 cup beef or chicken broth
  • 1.00 ham hock or meaty ham bone
  • salt , pepper, and thyme to taste

Instructions

    Combine ham hock and broth in a large pot and simmer 30 minutes.

    Add all vegetables and tomatoes.

    Simmer 45 minutes to 1 hour until all vegetables are very tender.

    Remove ham hock, shred any meat, and return to pot.

    Season with salt, pepper, and thyme.

    Serve hot with cornbread.
