Southern Vegetable Soup
A hearty vegetable soup with whatever is fresh from the garden.
Ingredients
- 2.00 cup potatoes
- 2.00 cup frozen corn
- 1.00 cup green beans
- 1.00 cup lima beans
- 2.00 cup arrots , diced
- 2.00 stalks celery , diced
- 1.00 onion , diced
- 1.00 cup an tomatoes
- 6.00 cup beef or chicken broth
- 1.00 ham hock or meaty ham bone
- salt , pepper, and thyme to taste
Instructions

Combine ham hock and broth in a large pot and simmer 30 minutes.

Add all vegetables and tomatoes.

Simmer 45 minutes to 1 hour until all vegetables are very tender.

Remove ham hock, shred any meat, and return to pot.

Season with salt, pepper, and thyme.

Serve hot with cornbread.
