Fried Catfish Dinner
Cornmeal-crusted catfish fried golden and served with hush puppies and coleslaw.
Ingredients
- 4.00 cup atfish fillets
- 1.00 cup yellow cornmeal
- 0.50 cup all-purpose flour
- 1.00 tsp salt
- 1.00 tsp black pepper
- 1.00 tsp cayenne
- 1.00 tsp garlic powder
- buttermilk for soaking
- vegetable oil for frying
- lemon wedges and tartar sauce

Soak catfish in buttermilk 30 minutes.

Mix cornmeal, flour, salt, pepper, cayenne, and garlic powder.

Remove catfish from buttermilk.

Dredge in cornmeal mixture, coating well.

Heat 2 inches of oil to 375°F.

Fry catfish 4-5 minutes per side until golden brown and cooked through.

Drain on paper towels.
