Andouille and Potato Stew
A hearty Cajun stew with andouille sausage, potatoes, and peppers.
Ingredients
- 1.00 lb andouille sausage , sliced
- 4.00 medium potatoes , diced
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 3.00 cup chicken broth
- 1.00 cup an tomatoes
- 2.00 tbsp vegetable oil
- cajun seasoning , salt, and pepper
- green onions
Instructions

Brown andouille in oil in a large pot.

Remove and set aside.

Sauté onion until softened.

Add garlic and cook 1 minute.

Add potatoes, broth, and tomatoes.

Season with Cajun seasoning, salt, and pepper.

Return sausage to pot.

Simmer 25-30 minutes until potatoes are very tender.
