Ingredients

  • 2.00 lb pork skin with some fat
  • 1.00 tbsp salt
  • cayenne and garlic powder for seasoning

Instructions

    Cut pork skin into 1 to 2 inch pieces.

    Boil in salted water 1 hour until soft.

    Drain and spread on a rack.

  4. 4

    Refrigerate overnight until completely dry.

    Heat oven to 250°F and cook 1 hour to render more fat.

    Remove and let cool.

    Heat vegetable oil to 400°F.

    Fry dried pork pieces in small batches — they will puff and expand.

    Fry 30-60 seconds until puffed and golden.

    Drain immediately.

    Season with cayenne and garlic powder.

    Serve warm.
