Cracklin Cornbread
Cornbread loaded with crispy pork cracklins baked in a cast iron skillet.
Ingredients
- 1.50 cup white cornmeal
- 0.50 cup all-purpose flour
- 1.00 tsp baking powder
- 0.50 tsp baking soda
- 1.00 tsp salt
- 1.50 cup buttermilk
- 2.00 l arge eggs
- 2.00 tbsp bacon drippings
- 1.00 cup pork cracklins , crushed

Preheat oven to 425°F.

Heat a cast iron skillet with bacon drippings.

Combine cornmeal, flour, baking powder, baking soda, and salt.

Whisk buttermilk and eggs together.

Mix wet into dry until combined.
