Ingredients

  • 1.00 whole chicken , cut up
  • 1.00 onion , diced
  • 1.00 g reen bell pepper , diced
  • 3.00 cup loves garlic , minced
  • 1.00 cup an tomatoes
  • 0.50 cup raisins
  • 0.25 cup almonds
  • 2.00 tbsp curry powder
  • 1.00 tsp thyme
  • salt and pepper
  • cooked white rice

Instructions

    Season chicken with salt and pepper.

    Brown in oil and remove.

    Sauté onion and bell pepper until softened.

    Add garlic and curry powder and cook 1 minute.

    Add tomatoes and thyme.

    Return chicken to pot.

    Simmer covered 45 minutes until chicken is very tender.

    Add raisins and cook 10 more minutes.

    Serve over white rice topped with toasted almonds.
