Butter Bean Succotash
Fresh butter beans and corn cooked with bacon and bell peppers.
Ingredients
- 2.00 cup butter beans , cooked
- 2.00 cup fresh or frozen corn
- 0.50 cup red bell pepper
- 0.25 cup onion
- 3.00 tbsp butter
- salt , pepper, and sugar to taste
- fresh basil or parsley
Instructions

Melt butter in a large skillet over medium heat.

Sauté onion and bell pepper until softened, about 5 minutes.

Add corn and cook 3 minutes.

Add butter beans and stir to combine.

Season with salt, pepper, and a pinch of sugar.
