Appalachian Soup Beans
Pinto beans cooked low and slow with fatback — simple mountain food.
Ingredients
- 2.00 cup dried pinto beans
- 1.00 ham hock
- 1.00 onion , diced
- water to cover
- salt and pepper
- cornbread and raw onion
Instructions

Soak beans overnight and drain.

Place beans, ham hock, and onion in a large pot.

Cover with water by 2 inches.

Bring to a boil then reduce heat.

Simmer 2 1/2 to 3 hours until beans are very soft and creamy.

Remove ham hock and pull off meat.

Return meat to pot.

Season with salt and pepper.

Serve with cornbread and sliced raw onion.
