Ingredients

  • 4.00 l arge russet potatoes
  • 0.50 cup butter
  • 0.50 cup sour cream
  • 0.50 cup whole milk
  • 1.00 cup cheddar cheese
  • 4.00 strips bacon , cooked and crumbled
  • 3.00 g reen onions , sliced
  • salt and pepper

Instructions

  1. 1

    Bake potatoes at 400°F for 1 hour until tender.

  2. 2

    Cool slightly then cut in half lengthwise.

  3. 3

    Scoop out flesh leaving a thin shell.

  4. 4

    Mash flesh with butter, sour cream, milk, half the cheese, salt, and pepper.

  5. 5

    Fold in half the bacon and green onions.

  6. 6

    Spoon filling back into shells.

  7. 7

    Top with remaining cheese and bacon.

  8. 8

    Bake at 375°F for 20 minutes until heated through and golden.

  9. 9

    Serve topped with remaining green onions.
