Ingredients

  • 2.00 cup dried black-eyed peas
  • 1.00 ham hock
  • 1.00 onion , diced
  • 3.00 cup loves garlic , minced
  • 3.00 stalks celery , diced
  • 1.00 cup an tomatoes
  • 8.00 cup chicken broth
  • 1.00 tsp thyme
  • salt and pepper
  • hot sauce to serve

Instructions

    Soak black-eyed peas overnight and drain.

    In a large pot combine peas, ham hock, onion, garlic, celery, tomatoes, broth, and thyme.

    Bring to a boil then reduce heat.

    Simmer 1 1/2 to 2 hours until peas are very tender.

    Remove ham hock, pull off any meat and return it to soup.

    Season with salt, pepper, and hot sauce.

    Serve with cornbread.
